PREP & DRY COMAL ROAST
Husk and scrub tomatillos (8 to 10) under warm water to remove sticky saponin residue. Halve jalapeños (2 to 3) lengthwise and destem serranos (3 to 4). Heat a dry comal or cast-iron skillet over medium-high heat. Place tomatillos flat-side down, jalapeños cut-side down, and serranos on the comal.

BLISTER & CHAR
Roast undisturbed until blistered and blackened in spots. Add garlic cloves (2 cloves) during final 2–3 minutes so they soften without scorching. Turn tomatillos once bottom halves turn yellow-green. Remove when tender throughout.

WATERLESS BLEND
Transfer charred tomatillos, jalapeños, serranos, and garlic into blender. (Kitchen Note:Do NOT add water; roasted tomatillo juices provide the perfect body).. Add dried marjoram (1/2 tsp), white vinegar (1 tbsp), and kosher salt (1 tsp). Blend on medium-low until smooth.

RAW FRESH FINISH
Pour salsa into a glass bowl. Stir in strained fresh lime juice (from 2 limes). Fold in minced fresh cilantro (1 tsp) and minced white onion (2 tsp) for a crunchy, fresh taquería finish.
Storage & Shelf Life
Glass jar or squeeze bottle. Up to 7 days refrigerated. Do not add water during blending; natural moisture from blistered tomatillos provides all the body.
