CARAMELIZE AROMATICS
Heat neutral oil (2 tbsp / 28g) in a skillet over medium heat. Add chopped white onion (1/2 onion) and halved garlic cloves (6 cloves). Sauté until deeply caramelized and browned, then remove and set aside.

FLASH-TOAST DRIED CHILES
In the same hot skillet with residual oil, toast destemmed morita chiles (3 chiles) and árbol chiles (6 chiles) for 20 to 30 seconds only until puffed and aromatic. Remove immediately before they scorch or turn black.

SEAR TOMATO WEDGES
Add Roma tomato wedges (3 to 4 tomatoes) to the hot pan. Sear undisturbed for 3 to 4 minutes until deeply blistered and charred, then turn.

BLEND WITH ACID
Add caramelized aromatics, toasted chiles, blistered tomatoes, and all residual pan oil into the blender. Add distilled white vinegar (2 to 3 tbsp / 35ml) and kosher salt (1 tsp / 6g). Blend on medium-low until liquefied. (Kitchen Note:If using high-speed blender, run on low to avoid pale foam)..

STRAIN & BOTTLE
Pour blended salsa through a fine-mesh strainer into a squeeze bottle, pressing solids with a spoon to yield a silky, pourable restaurant texture.
Storage & Shelf Life
Squeeze bottle. Up to 3 weeks refrigerated. High vinegar content and oil barrier extend shelf life significantly compared to water-based salsas.
